What's for Lunch?

From what I've read, a common concern about eating paleo is the time and planning that must be invested in eating when away from home. I work forty hours per week (forty-five if you include my unpaid lunch breaks) and my shifts could start as early as seven in the morning and end as late as eleven at night. Planning lunch and snacks for my week can be challenging, but where there's a will there's a way. Here's a typical lunch for me (packed and ready for my 7-4 shift tomorrow). I have a kale and romaine salad with a half roasted chicken breast, boiled egg, green pepper, and shaved heirloom carrot. I also have some mixed fruit, roasted almonds, and two squares of Lindt Excellence 90% (my absolute favourite - I like it better than the 85%). To dress my salad, I simply splash on some olive oil and apple cider vinegar.

Never Bored

When I started paleo I was a bit worried about giving up diet coke. I was never that big on it, and I didn't drink it every day, but I considered it a treat and enjoyed it a few times a week. When I made the change I was so caught up in planning and thinking about food that I found I wasn't even missing my faux sugary drinks. Lately (after buying the entire summer collection at David's Tea) I've been brewing sun tea. It's as simple as tea, tap water, and a clear container. Sit that sucker in a sunny spot for a couple hours and you're done. Put your tea on ice or in the fridge for later, then enjoy. With all the tea variety out there, I'm never lacking for a way to stay hydrated.

Seize the Day

I wasn't sure what to begin this blog with. What should the inaugural post be? A breakdown of the rules of paleo eating? An introduction to myself? A recipe to one of the many delicious meals I've had in my three-ish months of eating and living this way? I decided that can all wait. What better way to start than with what I ate for dinner. Tonight. As in two minutes ago.

Sometimes, I'm a fan of just throwing a bunch of stuff in a skillet and eating it when it's all cooked enough. Tonight was one of those times. I spent my holiday (Victoria Day/May 2-4/May Long Weekend) out in the sun - first, by going for a bike ride with my boyfriend, then by walking to exchange the bike he had just bought. I rounded out the day with a lazy dinner. Mashed sweet potato with salt, pepper, cumin, and Greek yogurt and a skillet-full of steak, shallot, jicama, carrot, zucchini, and kale. I seasoned my skillet full of stuff with jerk seasoning, salt, pepper, and chili flakes (the jerk seasoning from the grocery store is not spicy enough). I enjoyed it with a cocktail. It's a French 75 and it may not be perfectly paleo, but it is damn good.
